Americans also turned to horse meat in the early 1970s when rising inflation left other red meats out of reach for average Americans. Time magazine again reported on a shop in Westbrook, Connecticut selling horse meat exclusively, with sales of 6,000 pounds per day. The shop even published a 28-page cookbook. Although not in print anymore, the book can be found catalogued on the internet.
